Whether you need a quick bite before a 9 a.m. class or a late-night snack, the breakfast cookie in a mug is perfect for anyone wanting a nutrient-packed meal with limited kitchen space.
The five-minute recipe required a mug, a microwave and four ingredients. In a microwavable mug, use a fork to mash half of a banana. After it is thoroughly mashed, stir in one and a half tablespoons of peanut butter, half of a tablespoon of honey and one tablespoon of milk or milk alternative and mix well.
Add four tablespoons of oats to the mixture and stir. Microwave for 45 seconds to a minute or until firm to touch. Ingredients such as chocolate chips, dried fruit, granola or seeds may also be added. Recipe can be altered to fit any dietary restriction.
